Excerpt from The Double Energy Diet

After earning our college degrees, we decided it was time to put our knowledge of nutrition and exercise to work. We gathered our favorite original recipes—ones that best complemented our active lifestyle—and taught natural foods cooking classes at the local YMCA and area elementary schools. We found that most people are too busy to spend much time in the kitchen. Like you, they work or chase children around, and then spend evenings and weekends enjoying sports, outings, or cultural events. Yet they do want delicious and nutritious meals. Our classes helped us spread the good word that eating for added energy does not require a lot of time, effort, or money. Our diet is unique in its simplicity—and in its freedom from gimmicks. Many of our easy-to-make, nutritionally balanced recipes can stand alone or serve as the heart of a meal.

We advocate a daily meal pattern that can make a tremendous difference in helping you lose fat, pounds, and inches, and easily keep extra pounds from sneaking back on. This pattern, which consists of a light breakfast, moderate lunch, and light dinner, takes into account the fact that most of us feel much too tired to fix a large meal at the end of a long day. You’ll find our discussion of this light-moderate-light eating plan (also called the LML Plan) in chapter 3.

The Double Energy Diet is a lifestyle. We are living proof that it works—we have been living this lifestyle for over thirty years! We have always believed in preventive medicine. We have never been gravely sick, obese or experienced a health crisis that made us all of a sudden “get healthy.” We never have to “diet” before a special event such as a wedding or class reunion. We never starve ourselves for weeks to fit into an outfit for a special occasion. Why put yourself through that torture? Plus, those quick weight loss diets don’t work; often, you lose weight only to gain more weight once you go off the diet. The difference between the Double Energy Diet and the current diet trends is that the Double Energy Diet works for a lifetime.

We want to share with you why certain diets may not be as effective as you might think. High protein/low carbohydrate diets emphasize meats and seafood and discourage eating carbohydrates. Some carbohydrates, known as simple carbohydrates (“the white stuff”), should be discouraged. Simple carbohydrates include the sugars that are added to food products such as refined breads, pasta, baked goods, juices, flavored milk, and candies. These additives are mostly void of fiber and beneficial nutrients. Foods with a high sugar content and no fiber get digested quickly and are rapidly converted into glucose, which hikes up blood sugar. This forces your pancreas to produce excess insulin to help your body process all the glucose. As a result, your blood sugar takes a huge drop, which sends the “hungry” signal to your brain, triggering you to eat readily available foods to restore your blood sugar quickly. Insulin also prevents the breakdown of stored fats, so the more your insulin levels go up, the more fat you eventually accumulate and the greater your risk for obesity, diabetes, and heart disease.
